JOHN DORY SALAD
 Rinse and dry the fillets.  Cut them in slices and marinate in the lemon juice and oil for 2 hours.  Peel and dice the apples.  Sprinkle with lemon juice so they won't darken.  Rinse and strain the bean sprouts.  Stem the mushrooms, rinse them and sprinkle with lemon juice.  Slice them.  Peel the avocados,  use a melon-baller to scoop out balls.  Sprinkle with lemon juice.  Rinse the lettuce and shred it.  In a salad bowl, assemble all the salad ingredients and arrange the fillets on top.  In a bowl prepare a sauce with 2 tablespoons soy sauce, 2 tablespoons water, 3 tablespoons olive oil, salt and pepper.  Toss the salad and serve.

4 to 6 fillets John Dory or sole or similar
2 apples, peeled and chopped
2 avocados
4 mushrooms
4 tbsp canned corn kernels
1/2 cup  bean sprouts
3 tomatoes, peeled, seeded and diced
1 lettuce
juice of 3 lemons
soy sauce 
olive oil
salt, pepper
